Ingredients
10ml olive oil
200g onion, chopped
20g garlic, chopped
300g chopped tomatoes
20g chilli flakes
5g sugar
salt and black pepper, to taste
800g penne, cooked until al dente and drained
100g Parmesan shavings
a sprig of basil, for garnishing
Preparation
1. In a saucepan, heat olive oil and sauté onion and garlic until the onion has softened.
2. Add tomatoes, chilli flakes and sugar. Season with salt and pepper. Simmer for 25-30 minutes or until the sauce has thickened.
3. Add pasta to the simmering sauce and toss well. Garnish with Parmesan shavings and basil before serving.
