Turtle jelly of Hoi Tin Tong taken for testing recently was normal, a Hong Kong official said Wednesday. Speaking to the media, Ko Wing-man, Hong Kong secretary for food and health, said the Centre for Food Safety has examined the sample\'s microbiology, and the total bacterial count was below the legal limit. Ko also said the center will continue to ensure that food supplied to Hong Kong is safe. Earlier this month, Hoi Tin Tong, a famous Hong Kong herbal chain, was blamed for cleaning off mould-covered jelly before selling it as fresh. Meanwhile, a university study found that its turtle herbal jelly contained very little turtle shell. The Centre for Food Safety began to conduct a survey of Hoi Tin Tong.
